Recently , i came across Leah’s blog ( which I absolutely LOVED), and realize how much did I miss Dulce de Leche back in time when I was in America.
So, for Sandy Mayfield, and Sandy Cooper, and Mary Lundahl who where real mom’s to me 10 years ago, here it’s the DDL recipe.
1 litre of hole milk, 1/2 litre of cream, 1 kilo of Sugar, 250g ( 1/4 kilo) of honey, 1 vanilla pod, and backin soda ( soda bicarbonate)
Set the milk, the cream , sugar , honey and vanilla in a deep pot ( all the ingredients must cober 1/3 of the deep) to medium heat. Milk it’s jelous, if you turn your head will boil and make a mess in your kitchen. Stirring from time to time will help to keep it at equal temperature until it boils, and then you will need to stirr (correct verb?) continuously and set the heat down.
You will notice that after it starts boiling, it will start changing the color and to get thick. Here it goes a teaspoon of baking soda ( the smallest spoon). Carefull, it will make the Dulce raise, you need to stirr ( this horrible verb again, the present of stirring) until it goes down again. To will know the exact point to add the soda, by droping a small teaspoon of the dulce into a glass of cool water (soft ball point).
the baking soda will accelerate the cooking and make it take a deep brown color. Remember that while hot it will be about 60% more liquid that whe it cools, keep checking the point untill you get a hard ball in to a glass of cool whater.
and it plops when it boils, so keep your face out of the top of the pot.
